


Be easy on me here as I’m a newbie. I got my first pellet smoker a few weeks ago and have been loving it. Thought I would try brisket from a half cow we bought last year tonight and it’s not going smooth.
I’ve watched several videos on trimming and after defrosting I opened it up and it looks nothing like the store bought cuts I’ve seen. Not seeing a good fat cap, but I suppose the flatter side is that side?Starting chipping away at a lot of the hard fat around the outside and starting to think I just don’t have a good cut. I’m sure it’s mostly me, but does this not seem to have entirely too much fat? The point seems to be solid fat and am afraid to just keep going. Any help here would be awesome as I’m lost

Yeah, it’s botched. A small part of the flat with hardly any of the point on.
Personally I’d make some burgers out of it.

It really looks like you trimmed the meat off and just left the fat.
A lot of people don’t trim their brisket at all. It’s not the end of the world if you don’t do a trim. Worse case is you just have pieces with too much fat which you can cut off and not eat after it’s cooked. Take a look at google or pics in this sub of people who trim their briskets. It’s supposed to be aerodynamic, but that’s like a perfect world situation. An untrimmed brisket will cook just fine, this will not however. Brisket is a super fatty piece of meat, don’t try to cut it all off next time.
Put it all on the smoker for 3 hrs. Make chili.
It’s burger time! Or chilli. But it’s all good, we all learn somehow.
Sorry this is your first go at brisket with that hot mess. Smoke it anyway. It will be good practice on a shitty brisket. There will be edible parts

That brisket was massacred by someone in an earthquake. What you do have though is plenty of burger/chili meat and fat to use in a variety of ways. A let down but not a loss!
Whatever that cut of meat is should not have been sold as a brisket. It’s the correct area of the cow but was butchered all wrong.

Whoever processed your cow fucked up. I’ve noticed this from multiple different small time processors in my region.
It isn’t you, it was them.
Find a new butcher. Its obvious you did some butchering of your own, but that was a really bad cut in the first place.
